Once a breeding farm built in 1891, it is now a finely restored boutique hotel with exquisite d-- -cor and exceptional food and service. The renowned, gourmet Slate Restaurant, located inside the Blair Hill Inn, serves a tasty farm-to-table menu and the handsome wood-paneled cocktail lounge offers fine wines, libations, and small bites. The warm welcome, individual service and love of detail are evidenced by being one of only two Relais & Ch-- -teaux hotels and restaurants in Maine. We are looking for a creative and proficient in all aspects of food preparation, Executive Chef. You will be responsible for all aspects of leading the kitchen and building a successful culinary team while working in partnership with the FOH general manager to delivery exceptional dining experiences for our guests.-- - Responsibilities Plan and direct food preparation and culinary activitiesCreate daily and weekly menus for breakfast and dinner using fresh ingredients sourced from our garden, area farms and local vendors.-- -Estimate food requirements and food/labor costsSupervise kitchen staff--------s activitiesRecruit and manage kitchen staffRectify arising problems or complaintsGive prepared plates the -------final touch----- -Perform administrative dutiesComply with nutrition and sanitation regulations and safety standardsMaintain a positive and professional approach with coworkers and customers Skills Proven working experience as a head chef in a fine dining restaurantExcellent record of kitchen managementAbility to spot and resolve problems efficientlyCapable of delegating multiple tasksCommunication and leadership skillsKeep up with cooking trends and best practicesDegree in Culinary science or related certificate Job Type: Full-time 5 nights a week May - October3 nights a week December - March40-55 covers per nightBreakfast service daily Pay: From $80,000 per year based on experience plus housing and health care Benefits: Employee discountPaid time off Physical setting: Fine dining restaurant Supplemental pay types: Bonus pay for successful season Ability to relocate: Greenville, Maine
